Preheat the oven:
Set your oven to 180 °C (fan-forced if available). Line a baking tray with baking paper. -
Make the dough:
In a medium mixing bowl, combine the peanut butter, brown sugar, raw sugar, egg, bicarb soda, and vanilla extract. Stir well until a thick, sticky dough forms. -
Shape the cookies:
Using a spoon or your hands, scoop out portions of dough and roll them into balls (about 1 tablespoon each). Place them evenly spaced on the prepared tray. -
Press with a fork:
Gently press down on each dough ball with the back of a fork, creating a criss-cross pattern and flattening them slightly. -
Add the salt:
Sprinkle a few sea salt flakes on top of each cookie for that perfect salty kick. -
Bake:
Bake in the preheated oven for 12–15 minutes, or until the edges are golden and the centres are set but still soft. -
Cool:
Allow cookies to cool on the tray for 5 minutes, then transfer to a wire rack to cool completely. They will firm up as they cool.
